TANGY ITALIAN SALAD

Firm ripe tomatoes are combined with cool cucumbers and crisp lettuce leaves tossed in low fat basil flavoured vinaigrette.
Tomatoes provide vitamin A and fibre while lettuce and cucumbers contribute fibre as well as vitamin C and iron.


Cooking Time : Nil.
Preparation Time : 10 mins.

Serves 4.

For the salad

2 cups tomatoes (quartered and deseeded)
1 cup cucumber, sliced
2 cups lettuce leaves, torn into pieces

To be mixed into a dressing

1 teaspoon crushed garlic
1 teaspoon fresh basil leaves, chopped
1½ tablespoons lemon juice
1 teaspoon olive oil
salt and pepper to taste

Method


1. Combine all the ingredients in a salad bowl and chill thoroughly.


2. Just before serving, add the dressing and toss well.


3. Serve immediately.
