6 Eggs
1 Potato
1 Onion – I prefer Red onion, you can use white one
1 Handful of Chopped Parsley
½ Red Pepper
Salt to taste
1 teaspoon freshly ground Pepper
3 tablespoon Oil
2 tablespoon Butter
METHOD
1. Peel and finely chop the onion
2. Peel and finely slice the potato – ideal thing is to slice is using a potato peeler, it will give wafer thin slices this way
3. Wash and chop a pepper
4. Heat oil and butter in a non stick pan
5. Add the potatoes, cook on a Low heat, we want to sauté them not brown them – cook for 3-4 minutes, till tender
6. Break eggs into a bowl, add salt and pepper and whisk
7. Add the onions, peppers & parsley and mix
8. Add the mixture into the frying pan and mix to incoprate the eggs and the potatoes
9. Do NOT move it now, with a low heat let it completely set from the side down
10. Once set flip it over and cook from other side
11. Serve immediately
