Ingredients :

1 kg. Lauki.
21/2 litres Milk.
150 gms. Khoya / Mawa.
200 gms Sugar or to taste.
100 gms Sabudana.
7 Seasonal fruit, finely chopped.
Chopped Almonds to Garnish.


Preperation:

Peel the Lauki and grate it.
Soak the Sabudana in water for an hour.
Boil grated Lauki in 1/2 litre milk for 10 minutes. Allow to cool.
Now make a paste a paste in the blender.
Cook the remaining milk with sugar. add lauki paste, soaked sabudana (drain and throw the water)and khoya.
Allow this to cook on medium flame till the quantity reduces to half and reaches a thick consistency.Remove from heat and allow to cool.
Now add the chopped fruits to the cooled kheer.
Refrigerate ans serve cooled garnished with chopped almonds.
