1 Kg Tomato
5 Garlic Cloves
1 Large Onion
1 teaspoon Freshly Ground Pepper
2 tablespoon tomato puree
8-10 tablespoon Extra Virgin Olive Oil
Salt to taste
Freshly Ground Pepper to taste
1 Cup Mixed Frozen Vegetables
1 Pack Spaghetti
Water to boil
METHOD
1. Wash tomatoes, cut, remove seed and chop
2. Peel cloves and thinly chop
3. Peel and chop the onion
4. Heat the oil in a wide based pan
5. Add onion and fry until translucent
6. Add garlic and cook for a couple more minutes
7. Add tomatoes and puree and mix well
8. Simmer till you have a nice thick glossy sauce – add water if it’s getting too dry
9. When the sauce has thickened to your preference add salt and pepper
10. Boil the frozen vegetables till soft
11. Drain and add to the sauce & mix well
12. Cook the spaghetti according to the packet instruction, al dente works best
13. Add to a serving bowl, and top with a good gulp of olive oil
14. Stir in the sauce and mix well
