4 Large Red Potatoes
Water to boil
4 tablespoon Salted Butter
2 tablespoon Italian Mixed Herbs (Oregano, Thyme, Basil)
METHOD FOR POTATOES
1. Peel the potatoes and cut into small pieces
2. Add water & potatoes to a pan
3. Bring to boil and simmer till soft but still have a bite to them
4. Drain in a colander
5. Place in serving dish and add the butter & herbs
6. Mix well so that the potatoes get a bit ruffed up on the edges
7. Sprinkle with a pinch of leftover herbs
8. Serve along with other dishes as side dish
