- 4 Cups Sugar
- 2 Cups Water
- 1 tbsp lemon juice
- Pinch of Orange food colour
Combine in a heavy based pan, bring to boil and then let it simmer.
Ingredients For Jalabi
- 1 1/4th cup plain white flour
- 2 tbsp. fine semolina
- 1 tbsp. Instant rise yeast
- 1 tbsp. cooking oil
- 1 tbsp. Thick yogurt
- Pinch of Orange Food Colouring
- Warm water
Sieve dry ingredients into a bowl, next add the wet ingredients. Make a batter with the warm water, only add enough water to make a thin batter but not runny. Whisk this for about 10mins and leave in warm place to rise for 20-30 mins.
Once batter has risen, mix well. Pour batter into a ketchup bottle with a spout or piping bag. Heat oil in a wide based frying pan till hot then put heat to low/medium. Pour out the batter from the bottle directly into hot oil in swirls like how jalebi is made. Try one first to test temperature of oil. If they disintegrate it means oil too hot. They should sit on the pan floor for a few seconds and then rise and float at top. Fry till crisp changing sides with tongs. When they are brown and crisp, remove with tongs and dip in sugar syrup for 3/5 seconds and remove to a serving dish.
