½ kg of New Jersey Royal Potatoes
2 tablespoon Oil
1 Large Onion
¼ Cup Oil
4-6 Plum baby Tomatoes
1 tablespoon Mango Powder
1 tablespoon Chaat Masala
1 tablespoon Cumin Seeds
1 tablespoon Mustard Seeds
1 tablespoon Coriander Seeds – crushed
1 tablespoon Chilli Flakes
1 teaspoon Tomato Paste
1 Handful of Fresh Coriander
2 teaspoon Lemon Juice
1 teaspoon Chilli Powder
Salt to taste
METHOD
1. Boil water in a pan
2. While water is boiling, wash, peel and cut the potatoes into half
3. Add potatoes, salt & 2 table spoon oil to the pan – boil for 8-10minutes till potatoes are cooked but have a bite to them
4. Meanwhile, peel & slice the onion
5. Heat oil in a non stick wide based pan
6. Lower the heat, add onion and fry – do NOT let it go brown
7. Next add the potatoes and mix well
8. Add all the dry ingredients & mix
9. Add the tomato paste and lemon juice
10. Cut baby tomatoes into quarters long ways and add to the pan
11. Remove off heat, add chopped coriander, mix well
