INGREDIENTS
1 Can Pre-Boiled Chickpeas
2 tablespoon Freshly squeezed Lemon Juice
3 Garlic Cloves - Crushed
Salt to taste
5-6 tablespoon Tahini Paste
3-4 tablespoon Extra Virgin Olive Oil
1 teaspoon Sumac - alternatively use Paprika
METHOD
1. Open chickpeas tins, drain and rinse well under running water
2. Add the chickpeas, lemon juice, garlic, salt and Tahini in a food processor
3. Blend to a creamy purée, add water if you wish to make a more smoother paste if you wish
4. Add to a serving dish and smooth out with a back of a dinner spoon
5. Add the handful of chickpeas on top
6. Drizzle with the olive oil
7. Add the freshly chopped parsley leaves
8. Sprinkle with Sumac
9. Serve with hot pita bread cut into strips or quarters
