INGREDIENTS:
- 1 - Spray (Non-stick, for cooking)
14 - Ounces of semi-sweet chocolate
2 - Containers (1 container is equivalent to 15 ounces) of ricotta cheese (partly skimmed, at room temperature)
3/4 - Cup of heavy cream
1 - Package (1 package is equivalent to 9 ounces) of chocolate wafers (44 - cookies)
Preparing of pan: Remove the sides and ready the spring form pan (of size 9-inch and round in shape). Spread the waxed paper sheet inside and bottom of the over, leaving an extra 1 inch to hang out side, and lock the sides to grip the paper firmly. With the cooking spray, spray it to the in-side portion of the pan and also line the sides with the waxed paper (of size long - 28 inches and of wide - 4 inches).
Chocolate-ricotta mixture: Take chocolate (12 ounces) and break it and put it into small pieces. Place the medium sized bowl (heat-proof) over the simmering water in the pan and cook it by stirring sporadically, until the chocolate melts.
Take a food processor, and blend ricotta in it until turning smoothly. You should scrap the sides of the bowl occasionally. Now add lukewarm chocolate to it and blend it until turning smoothly. Take a larger sized bowl, add and beat the cream until it turns stiff and peaks are formed. With the help of the rubber spatula, softly and slowly mix chocolate-ricotta mixture.
Arranging of cake: First, at the bottom of the pan, arrange the cookies in an over-lapping manner. Over it fill half of the mixture (chocolate ricotta). Now fill it up with the balance cookies and again top up with a balance mixture (chocolate ricotta), Cover it up with the plastic wrap; and refrigerate it for about 6 hours.
At the time of serving, remove the hold of the pan and now from the sides remove the waxed paper. Remove the cake along with the waxed paper at the bottom and shift it to the flat surface. With the help of a metal spatula lift the cake slowly and remove the waxed paper. Then with the vegetable peeler, shave the balance chocolate (2 ounces) over the top of the cake. With the help of a knife, (which is immersed in the hot water) cut the cake and put it into slices (Clean the knife after every cut).
