2lb Lamb Mince
3 Large Onions – finely chopped
4-6 Green chillies – finely chopped
1 tablespoon of Ginger Garlic Paste
3 tablespoon Coriander Seeds – crushed
2 heaped tablespoon Atta - whole wheat flour
3 tomatoes - chopped
2 Eggs
1-2 tablespoon Cumin Seeds
1-2 tablespoon Garam Masala
Optional: 1-2 tablespoon Chilli flakes
Optional: 1 tablespoon Red Chilli Powder
Salt to taste
Oil to fry
METHOD
1. Place mince in a bowl and add onions and green chilli and mix well
2. Add to a food processors and blitz for a minute or so - the onions will be turned to mush... if you wish u can omit this step, its just personal preference
3. Remove and mix well with hands again
4. Add the ginger garlic paste and all the dry ingredient and mix well
5.Cover and leave in fridge to marinate for 2-3 hours, overnight works best
6. Add tomatoes, atta, eggs and mix well with hands
7. Take a tennis ball size of mince and shape into an round or oval kebab
8. Heat oil in a frying pan
9. Add kebabs and fry on a medium heat turning occasionally till cooked and golden brown
10. Serve immediately
