Talking Spinach And Courgette Lasagne
A low fat and healthier alternative to an old favorite
Serves 4
Preparation time 15 minutes
Cooking time 35 minutes
Ingredients:
* 3 tbsp oil
* 50g plain fl our
* 500ml skimmed milk
* 100g Gruyère cheese, grated
* 1 tsp Dijon mustard
* salt and black pepper
* 225g washed spinach
* 250g fresh lasagne sheets
* 2 medium courgettes, grated
* 2 roasted red peppers or 150g sunblushed tomatoes
* green salad, to serve
Preparation:
1. Preheat oven to 200°C/400°F/Gas 6.
2. Heat the oil in a small pan and stir in the flour. Cook until thickened, then gradually pour in the milk, stirring all the time, until it’s smooth and thickened. Stir in the cheese, mustard, and salt and pepper.
3. Place the spinach in a colander and pour over a kettle of boiling water. Drain well.
4. Place 2 sheets of lasagne in the base of a rectangular baking dish, add half the spinach, courgettes and peppers or tomatoes. Pour over half the cheese sauce, top with 2 more lasagne sheets, then the remaining vegetables. Place 2 lasagne sheets on top, pour over the remaining sauce and bake for 30 minutes until golden. Serve with a green salad.
